Drying Yield
On average, 6 to 8 kilograms of fresh apples produce approximately 1 kilogram of dried apples, depending on the variety and moisture content.

Industrial Methods for Drying Apples
1. Sun Drying Method
Wash the apples thoroughly and slice them evenly.
To minimize browning, lightly coat or spray the slices with lemon juice before drying.
Arrange the slices on mesh drying trays under direct sunlight and turn them periodically to ensure uniform drying.
Depending on the apple variety, sunlight intensity, ambient temperature (approximately 32°C / 90°F), and low humidity, the drying process usually takes 3 to 7 days.
The darkening of freshly cut apples is caused by enzymatic oxidation.
If the dried apples are intended for herbal tea or fruit infusions, they can be lightly toasted after drying and flavored with cinnamon for a richer taste.
2. Hot-Air (Industrial) Drying Method
After washing, slice the apples into thin, uniform pieces and place them on the trays of an industrial dryer.
Dry the slices at 55–65°C (131–149°F) with continuous hot-air circulation and controlled humidity reduction.
Under industrial conditions, the drying process generally requires approximately 15 hours.
For improved product quality, it is recommended to begin with a slightly higher temperature and gradually reduce it during the drying cycle.
Excessive heat may cause the apple sugars to caramelize, resulting in darkening, scorching, and reduced product quality.
Preventing Oxidation and Browning
To prevent oxidation and enzymatic browning, immerse the apple slices for 5 minutes in a solution containing:
- 1.5 liters of water
- 2 tablespoons of lemon juice
After soaking, spread the slices evenly on the drying trays.
This treatment not only reduces oxidation but also helps sanitize the fruit before drying.
As an alternative to lemon juice, pineapple juice or canned pineapple syrup may be used. This enhances the apples with a naturally sweeter flavor and gives the dried product a more attractive golden-yellow color.
