Iran is the largest producer of this product in the world. Planting of this product often takes place in the cities of Rafsanjan, Damghan, Qazvin, Yazd, Sirjan and Shahrbabak.
Aflatoxin is a poison that is secreted by molds called Aspergillus, this fungus needs proper heat and moisture to grow and is the most important pest of pistachio crops.
In general, this product is classified in terms of appearance and size:
A- Classification in terms of appearance:
Pistachios are named according to the ratio of height to diameter as shown below.
B- Classification in terms of size:
The size or coarseness of the pistachio is determined based on its ounce number, the amount of pistachio ounce is calculated in the following way.
The number used for the pistachio ounce shows the number of bunches of 5 pistachio seeds in 142 grams.
For this purpose, divide the number of pistachio seeds in 142 grams by 5 and the resulting number shows the pistachio ounce.
Fewer pistachio nuts indicate that the pistachio seeds are larger.
Anas between 20 and 22: very big
Anas between 22-24: large
Anas between 24-26: average
Anas above 26: small
